Sopas

Ingredients:

• 1/2 lb chicken • 5 cups chicken stock • 2 garlic cloves, chopped • 1 small onion, chopped • 2 tbsp fish sauce • 1 cup macaroni • 1 carrot • 1/2 cup milk • 3/4 cups cabbage • 1 tsp salt • 1/4 tsp pepper • 1/8 tsp dark sesame oil • 2 tbsp oil

Instructions:

Put a 1/2 pound chicken breast and broth in a pan. Cover and bring to a boil. Reduce the heat to a simmer and cook until the chicken is tender, about 30 minutes. Remove the chicken and let cool. Discard the chicken skin and bones. Shred the chicken meat and set aside. Strain the broth and set aside. Clean the pan.

Heat the oil and sauté the onions and garlic, until the onion is soft. Return the chicken to the pan and stir-fry for 2 minutes. Add the chicken broth. Cover and bring to a boil.

Reduce the heat and simmer for 2 minutes. Add the fish sauce to taste. Add the macaroni and simmer until tender. Cut carrot into matchstick size pieces and add to the pot, along with the milk. Simmer until the carrots are crispy and tender. Add the cabbage. Cook for 1 more minute. Add the sesame oil and season to taste with the salt and pepper.

6 servings  

 

Arroz Caldo

Ingredients:

• 1 1/2 lbs chicken • 2 tbsp oil • 10 garlic cloves, chopped • 1 small onion, sliced • 1 tsp fresh ginger, chopped • 2 1/2 cups rice • 4 cups water • 3 tbsp fish sauce • 4 green onions

Instructions:

Cut chicken into serving sizes, if necessary. Heat oil in large frying pan and sauté garlic until pale golden. Remove garlic and reserve. Add onion and ginger to pan and fry until soft., then add chicken and cook until is is approximately half done. Add rice and stir fry for a few minutes. Add water and fish sauce. Bring to a boil, then turn heat to low. Cover tightly and cook for 20 minutes without lifting the lid. Sprinkle cooked garlic on top when serving. 6 servings  

 

Chicken Tinola One of my favorites!

* 1 chicken (1 kilo) * 3 potatoes, quartered or 2 cups quartered upo or sayote * 1 onion, chopped * 4 cloves garlic, crushed * 2 tbsp. ginger strips * 2 tbsp. patis * 1 tsp. vetsin * 4-5 cups rice water * 1/2 cup young SILI leaves

Clean and cut chicken into small serving pieces. Sauté' garlic and ginger until brown. Add onion. When wilted, add chicken. Stir for 3 minutes, pour in patis. Cook for another 3 minutes, then, add 1 cup rice water. Cover and let simmer. When chicken is half done, add potatoes. Pour in the remaining rice water. Cover and simmer until chicken and potatoes are done. Lastly, add vetsin and sili leaves. Let boil for 3 minutes.  

SOPA DE FIDEOS

2 tbsp oil 1.2 tbsp garlic, macerated 1 small onions, sliced 3/4 cup ground beef or pork 4 cup broth 2 tbsp soy sauce 1/2 tsp pepper 1 egg, scrambled and cut into pieces

Sauté garlic in hot oil. /add onions and grond meat, cook until done. Add broth and seasonins; bring to a boil. Add fideos and cook until done. Add eggstrips and serve hot. Serves 6.
